Not Mrs. Potato Heads Favorite Soup!

When the weather starts to get a bit nippy, it is time to start thinking about all the wonderful kinds of soups available to warm ones’ happy tummy. A favorite among most people is the tried and true Potato Soup.

Top it off with some garnishes, compliment it with a cheesy grilled cheese, and lunch or dinner is served.

Not Mrs. Potato Heads Favorite Soup!
Servings
Ingredients
  • 3 lbs golden potatoes cut into 3/4" pieces
  • cooking spray to coat bottom of pot
  • 3 TBLSP cooking oil
  • 1/4 cup flour
  • 2 quarts water
  • 2 tsp salt
  • 1 tsp black pepper ground
  • 2 bay leaves
  • 1 sprig rosemary
  • 3 tsp chicken bouillon I use better than Bouillon
  • 1 1/2 cups heavy whipping cream
  • salt and pepper to taste
Garnishes
  • 4 slices bacon cooked and crumbled
  • 1/4 cup chives cut
  • grated cheddar cheese

Instructions
  1. Spray a large pot with cooking spray and over medium heat add 3 TBLSP cooking oil. Add the cut potatoes and cook until half-way cooked.
  2. Add flour to the potatoes and cook for 2 to 3 minutes.
  3. Add water, salt, pepper, bay leaves, rosemary sprig, and chicken bouillon. Stir until ingredients are well combined.
  4. When potatoes are cooked through, remove 2 cups of potatoes, mash them, and return them to the pot to add a bit more thickness to the soup.
  5. Add cream. Simmer 5 minutes. Taste to see if more salt and or pepper is needed.
  6. Garnish with chopped bacon pieces, green onions, and cheese.
